Tomato Soup Recipe:

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup fresh basil, chopped (for garnish)
  • 1/2 cup heavy cream (optional, for a creamy version)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onions, diced carrots, sliced celery, and minced garlic. Sauté until the vegetables are softened.

  2. Pour in the crushed tomatoes and vegetable or chicken broth. Stir well to combine.

  3. Add dried basil, dried oregano, dried thyme, salt, and pepper to the pot. Stir again.

  4. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20-30 minutes to allow the flavors to meld.

  5. Use an immersion blender to blend the soup until smooth. If you prefer a chunkier soup, you can skip this step.

  6. If you want a creamy tomato soup, stir in the heavy cream at this point and heat through.

  7. Taste the soup and adjust the seasoning if necessary.

  8. Serve the tomato soup hot, garnished with chopped fresh basil.
